Korean Japchae / Stir fried noodles

This dish is quick to pull together once all the prep work has been done. I love the flavors and the versatility of using different vegetables or whatever is on hand. 

Korean Japchae
Delicious stir fried noodles.

  1. 4oz vermicelli cooked
  2. 3-4 wood ear or shiitake mushrooms
  3. handful of spinach
  4. 1/4 small onion thinly sliced
  5. 1/2 shredded carrot
  6. beef (optional)
  7. 2-4 tablespoons soy sauce
  8. 2 teaspoons sesame oil
  9. sesame seeds
  10. vegetable oil for frying
  1. Mix soy sauce, sesame oil, and sugar and set aside.
  2. Heat wok. Start cooking beef, toss in carrots and other vegetables. Stir in noodles and sauce. Mix well and plate to serve.

    What are the vermicelli noodles made of? My Asian market has about 7 different types called “vermicelli” but some are wheat, others rice, brown rice and even bean thread type. I know I can use any type and still have a tasty dish but I would like to make this just like you did.

      The noodles I use for Japchae are made from sweet potato starch. They are a chewier than typical noodles and I really enjoy the texture. Good luck with the dish and please let me know how it turned out!
