Kimchi & Cornbread

This is by far one of my favorite cookies and I think they are totally underrated.

Snickerdoodles are so easy to make and you probably have all the ingredients on hand. I love the subtle sweet crunch that leads to a warm and comforting soft center.

This is cookie number two for my holiday baking challenge I set for myself this year. I’m hoping to bake a new cookie everyday until Christmas. I chose to start off with some easy ones to warm up.



  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp cream of tartar
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon


  1. Preheat oven to 375 F.

  2. In a large bowl cream the butter and sugar.

  3. Add the egg to the mixture and beat until combined.

  4. Add the vanilla extract and mix until combined.

  5. Add the baking soda, cream of tartar, and flour to the sugar mixture and mix until combined.

  6. In a small bowl mix the rest of the sugar and cinnamon to roll the cookie sin.

  7. Scoop some dough out and roll it to form a ball.

  8. Roll the ball of cookie dough around in the bowl of cinnamon and sugar until coated. Place on a cookie sheet about two inches apart.

  9. Bake in preheated oven for 10-12 minutes. Cool on a rack and enjoy.

    Those are the right ones! That is the recipe I have used since I was a little kid. Good job on the bake. I wish I had time to bake cookies but these days, I am working just too many hours. I’m gonna try to get my sons to get some made.
